I just made coconut dhal, eggplant in yoghurt & rice.
just knocked up...Roasted Veg Salsa
2x Corn Cobs(microwave for 5min...then BBQ, when charred run ur knife down them' to remove the kernels)
2 x Red Onion(quartered...BBQ, then chopped)
3x Peppers(BBq till black as fuck, chuck in ziplock bag & forget about them for 10min....then remove skin, seeds & chop
4/5 XTomatoes(again skinned, de-seeded & chopped)
Season to your taste with Olive oil, Balsamic vinegar, Lime juice, chilli, fresh chopped corriander & basil, Salt/pepper.
killer stuff..soo fresh & tasty, goes wicked with BBQ cajun/jerk chicken & also fish, which i'm having 2 tonight...just preparing the sardines & mackerel, nom..

edit: I just miss the bacon ;-) not quite a veggie myself...
i just made a smoothie with a papaya and grapefruit.

trying once again, since i really need some pointers here. i suck at cooking food, mostly because i hate it, but nevertheless you have to eat.
any ideas regarding cheap easy-to-cook food? doesnt hurt if its healthy aswell...
Make your own bolognese sauce and freeze it for a week. Takes couple of hours to finish (most of them waiting) and it tastes much better than those machined pots o sauce.
one of the easiest things for anyone to cook, but looks and tastes amazing is spaghetti bolognese.
follow this:
500g lean beef mince
2 red peppers
1 large onion
4/5 mushrooms (wee ones)
clove of garlic
dried mixed herbs
basil (dried or fresh)
2 cans of chopped tomatoes
3 tomatoes, peeled
red wine
balsamic vinegar
ok. this is well easier than it seems. before you do anything, open your cans of tomatoes, chop up your peeled tomatoes, finely chop the garlic, roughly chop the mushrooms, onions and chop and de-seed the pepper (throw away the stalk of the pepper, bit is pure shite.)
then,
get a big fucking pot and throw some cooking oil in there, about the same amount you could fit in your ears. Then throw in the garlic and wait for it to start sizzling, then throw in the onion and pepper and stir it for about 5-7 minutes, until the onion starts to go soft like pissed on cardboard.
then,
throw in the mince and stir to fuck, put some weight behind your stirs as it will arouse the beef, and beef thats aroused is beef thats good. Once youve nearly lost site of the pink bits in the mince, throw in one can of chopped tomatoes, the peeled tomatoes, a glug of balsamic vinegar and a succulent glug of red wine. bring this to the boil (big bubbles) then take it down to simmer (wee bubbles) and just leave it.
go back to it everynow and again and give it a wee stir. Now, when the sauce has started to reduce (gets lower in the pan and thickens up a wee bit) add your other can of chopped tomatoes and another sexy glug of red wine, and reduce again. Just let it reduce right down till you get a consistensty of the sauce that is comparable to a strawberry dakari, not thick, but not watery.
you can re-do the reduce and add another tin of tomatoes and another meaty glug of red wine which is what I do, but then it pushes on for about 2 and a half hours cooking time, but damn that shit is tasty.
this might seem like a lot shit to buy, but with this amount you can feed on it for a week solid. I have on many occasion.

due to my hangover I visited the local waitrose and bought myself some real quality food to get over it.
cooking up some pork and caramelised red onion sausage just now, gt myself some quality sun dried tomatoes, beastin chorizo slices and one amazing fillet steak for later. mmmm
lincolnshire sausage or nothing for me, but that will sort you right out meschi.

meschis bolognese recipie is missing carrots, celery, milk and chicken liver.
@karl, how about this one, it will impress if you have ladies over. is really quick, really cheap, and really easy
what you need
spaghetti/linguine
courgettes/zuchinis x 2
lemon x 1
olive oil
knob of butter (dont use margerine)
slice you courgettes into little discs, and add them to a hott pan witht hte butter. medium to high heat, wait till they look tasty, few minutes should do. in the mean time your spaghetti has been cooking, drain it when it still has a bit of bite to it 'al dente', not when its gone too floppy and soft. (maybe an adult can help you here as it need a little experience)
when you drain it, leave a splash of the water in the pasta, chuck your courgettes in with a dribble of oil, mix it all up, then zest you lemon and chuck that on top too make it look pretty, smell great and ytaste even better.
you can also use mushrooms instead of courgettes and its just as tasty,
got home late, my beautiful partner has left me a chicken laksa, bless.
