Easter in Europe

Are most stores and restaurants closed during Easter and Monday after Easter? With a 2 week break, I had planned on visiting Spain and Italy, but I realize many things could be closed. Therefore I decided to consider squeezing in Lyon and Nice in France. But does anyone have any knowledge of what Easter in Europe is like?
