I think your ideas are pretty good so far. 101 is good for learning synthesis but ms2000 and juno would be great and probably satisfying for you to play. i dont see an eps16 as what you need but you might consider something like an esq-1 or 80. pretty cheap, straightforward to program,nice feeling keyboard and that ensoniq sound.
if you're not fussed about midi or sequencing, the juno-6 would be quite cheap and sounds amazing
